St lucia is a very popular honeymoon destination. If you are a nature lover Soufriere is the place to go. Depending on your budget, expensive Anse Chastanet, Ladera, middle of the road Stonefield and budget La Haut, Hummingbird. Great nature area – we loved climbing the Big piton, hiking in the rain forest and bathing in the black water of the sulfur springs. Not attractive to look at but it feels wonderful (once you get past the smell).
Been to many Caribbean Islands and loved them all so you cant go wrong with any of them. St. Johns in the US Virgin Islands fits the bill based on what you asked for above. Not to crowded, lots of beaches that are remote, great snorkeling yada, yada.
